The team behind Bowery small plates eatery Pearl & Ash are expanding their reach on the block with an adjacent new restaurant called Rebelle, which debuts this evening. Partners Branden McRill, Patrick Cappiello and Alessandro Zampedri have tapped Chef Daniel Eddy to helm the kitchen, which will turn out a tight menu of French accented dishes influenced by Eddy's years spent at Parisian eatery Spring.

Meals begin at First ($12), a selection of smaller dishes including Leek Vinaigrette with a soft boiled egg, dijon and leek ash; then move to Second ($15), where you'll find Scallop with sea urchin, ginger creme, cabbage and mint and Sweetbread with crab and eggplant. Thirds ($24) include a vegetarian riff of Beet Bourguignon with carrot, pearl onions and mushrooms or Pork with headcheese, violet mustard and mustard greens. Desserts—or Fourth, as its known here—are executed by pastry chef Jessica Yang, who's making Chocolate with cardamom, caramel rocks and yogurt sorbet and a Rhubarb dish with lemongrass jelly, biscuit and vanilla ice cream.

The dining room offers two sections for eating, with one offering a view into the kitchen at an 8-seat chef's table. Views of the bartenders constructing house cocktails—Rickey with rum, apricot and lim or Cobbler with brandy, soda and fruit—can be obtained at the 9-seat bar, where they're also offering a menu of small plates until the bar closes. Bites include Smoked Olives ($7) and Anchovies ($8), plus heartier fare including Fried Pigs head ($12) and a Steak Bordelaise ($26).
