The haute cocktails keep coming to the East Village. Enter the latest: the Momofuku crew's new cocktail lounge behind Ssäm Bar, Booker and Dax. The whole thing is very science-y and should very much appeal to the WD-50 set. Liquid nitrogen-cooled glasses anyone?
Booker and Dax lives in the original Milk Bar space behind Ssäm Bar and the room itself isn't all that changed. But the fare is not the same at all. Instead of crack pie and cereal milk there are now boozy drinks like the "Lady of the Night," made with clarified tomato juice, house-distilled horseradish, sriracha, Worcesteshire sauce and reposado tequila in a nitrogen-cooled glass. Oh, you prefer your drinks hot? Well Dave Arnold, the French Culinary Institute director of culinary technology also has drinks that—taking a safer page from Albert Trummer—are lit up using the bar's built-in 1,500° heater (created by Arnold himself). In addition to all the fancy drinks the spot, named after Arnold's two sons, will also have a basic bites menu that includes the signature Momo pork buns and, soon they say, french fries.
