It's Mardi Gras weekend, and the estimable subterranean beer warren Jimmy’s No. 43 is celebrating with a N’Orleans Style Gumbo Cook-off to raise money for Chefs for the Marcellus. The group is comprised of food professionals who are working to organize the industry to "protect our regional foodshed from the dangers of hydraulic fracturing for natural gas (fracking)."

Cooks who will be bringing gumbo to the event include Jon Bratton, NYC Hot Sauce; Chef Brendan Corr (formerly of Co.); author Cathy Erway, Not Eating Out in NY; Michael Laarhoven, Back Forty; Michele Lamort; Nissa Pierson, Ger-Nis Culinary and Herb Center; Dave Seigal, Stonyfield Café; Paul Simon, Bourbon Street Bar & Grille; Brent Sims, The Green Table; and chef Jessica Wilson.

All ingredients will ideally be sourced from the Marcellus Shale region, a geologic formation that covers a large area of the mid-Atlantic region, including much of New York’s southern tier: an area of produce, dairy and livestock farms; breweries and wineries; and the source of New York’s City’s renowned drinking water. In addition to produce from the region, some chefs will be using wild white Florida shrimp donated by Sea to Table. $20 at the door gets you unlimited tastings from 1 p.m. to 3 p.m.
